Ingredients:
2 yellow onions, finely sliced (ring shape) 4 garlic cloves, chopped 1 red pepper, roughly chopped 1 green pepper, roughly chopped 8 medium size potatoes, sliced 2 tomatoes, skinless, finely chopped 2 pounds fresh fish of your choice, cut in pieces (hand palm size) salt and pepper to taste 1 tbsp paprika 2 bay leaves Half a bottle of white wine
Directions:
On a big pan, layer the ingredients on the following order: Potatoes, onions and garlic, fish, mix of green and red peppers, chopped tomato, a good pinch salt and pepper, paprika and bay leaf. Repeat the same order and end with a layer of potatoes. Pour the wine over the layers and put the lid on. Allow it to cook slowly in low heat. The wine should be enough to create the necessary juices to cook this dish. You may add boiling water if needed.
